All I know is that a tag is a name for data in a system. So we can define with each tag that its data comes from where and goes to where. But I think there is more complete system beyond this. Does anybody know more about tags and their properties? Is there any reference for that?

A tag is simply a name for a bit address to allow HMIs to be integrated to more PC driven systems.
