I have Hitachi DC motor. The motor type is DPO4A191E. 4 wires off the encoder (red, BLACK, white, blue). What are each for? What do I have?

Without knowing anything about this I would ~guess~ that you have Power, Ground, Channel A and channel B. The assumption is that it is an incremental encoder.
