In my experience, for control of the flow of liquids, butterfly valves are typically used for on/off control only. Globe valves I assume would give you performance similar to a gate valve where you can regulate flow a little better.
You did not mention what you are trying to control the flow of (solid, liquid or gas).
I was taught that it was more a matter of how good of a shut off seal that you need. While you can get a really good seal with a butter fly it will never be as good as a ball valve.
Since liquids are easier to seal than gases butter flies are seldom used on gases.
Both types of valves are for on/off and neither prove great flow control. While it is possible to use both for control, for really good regulation you need a very different type of valve construction.

Solid flow control has got be a really neat trick. Maybe you meant slurries.
