I need to measure the thickness of a plate while rolling - continuously and record the data.

1100 wide x 6 mm thick -- 0.05mm resolution
 
Depending on the speed I would look at using a ball or roller bearing follower that is spring loaded to push down onto your plate against a calibrated rigid backing (i.e. another bearing.) Your bearings should be precision, with very low runout. Make sure that the mechanical design of the measurement system takes out any possibility that warping of the plate wil throw off your results. Then you can connect your follower rod to a linear encoder or LVDT Just make sure the accuracies of your measurement device are up to the task. As far as recording the data you will need to plug the data output into a data acquisition system of some sort. The system used will depend on your data requirements.

What you want is an thickness gauge. There are some old americium isotope gauges, and the newer high voltage xray.

I don't remember what you said for your tolerances but this is what they use in rolling mills

our speeds were up to 7000Ft/m with much high resolution. Not sure if the ones we used would be the right application for your task though.
