why do we need two stage regulators for gas cylinders

i have read at many places that a single stage pressure regulator used in a gas cylinder need frequent adjustment of knob to get the desired output pressure.My doubt is if my set pressure is 10 bar .For a cylinder with pressure of 150 bar to start and decreasing ,when should i start to adjust the knob?
